What career opportunities can this lead to?

This course is ideal for anyone interested and looking to increase their repertoire and skills. Students will learn the necessary skills to make high quality chocolate confections, which would be suitable for a small artisan business working from home.

What are the entry requirements?

Students must be able to confidently temper chocolate (using a digital thermometer and seeding method) and make basic and flavoured ganaches. Ideally students will have already taken Chocolate Skills Beginners (Introductory) course.

What does this programme involve?

Students will learn how to make advanced chocolates, including:
- Layered Ganaches
- Advanced decoration
- Cake decoration
- Soft centres
- Infused ganaches
- Contemporary flavours
- Using moulds

How is the programme taught and assessed?

The course will be taught with a mix of teacher led demonstrations, theory, and hands on practice.

What else do I need to know?

This course is suitable for anyone wishing to learn more about chocolate and to learn how to make sophisticated chocolate confections.

Students should bring a notebook and pen. The first class will be demonstration led, and from then on recipes and ingredients list will be sent out in advance.

Students will be expected to provide their own ingredients. They should buy the best quality they can afford for the best results, but the cost for the duration of the whole course will not exceed 5-10 per week.
