What are the entry requirements?

This course is suitable for all students wishing to work primarily with royal icing but also those who would like to learn some sugar paste skills.

What does this programme involve?

The course will enable students to gain skills in:-

- Royal icing drop line work
- Runouts made with royal icing
- Pressure piping skills
- Piping shells and scrolls
- Basic work with sugarpaste
- Royal icing a cake
- Covering a cake in fondant icing

The main proportion of the course will cover various royal icing piping skills and these skills will be used to make different cake projects.

A college certificate will be awarded on request.

How is the programme taught and assessed?

Students will learn by practical application and demonstrations by the tutor.

What else do I need to know?

Students will need the following resources to participate in the course:

- Plain icing tubes numbers 1, 1.5, and 2 (make P.J.E. or Beckenal)
- Star icing tubes number 43 (make P.M.E or Beckenal)
- 2 x 12'' Boards for runouts
Beginners will also need a board for practice, preferably a dark card 12 x 12'' or a board covered in dark fablon.

Materials will be discussed with students at the first lesson.

Students are responsible for the purchase of materials relevant to the course.

A small weekly charge will be made to cover the cost of the icing and materials supplied by the tutor.
