The catering and hospitality industry offers up a world of opportunities; it is exciting, fast paced and dynamic. No two days are ever the same, and the roles and responsibilities on offer are huge.
Thats why we are delighted to deliver our Level 2 diploma. The duration of the course will be over 12 months with one night per month as Master Class at the College, Tuesday 16.00 until 21.00 this will include practical and theoretical skills, and demonstrations.
The Level 2 NVQ Diploma in Food Production and Cooking is suggested for candidates working within local authority catering, school meals, residential and care homes, the National Health Service, either as contractors or direct caterers, and licensed retail outlets.
This in-depth, industry recognised qualification is perfect for those currently working as it sits alongside your job commitments. Its a part time course, meaning you can gain a nationally accredited qualification while expanding your real life experience.
Plus, the course is ideal for anyone who might have fallen into a job but lacks the formal qualification needed to progress. The College also has a huge selection of employer links locally and nationally, with a strong pool in London.

This qualification is delivered as a blended model with online delivery on Google Classroom and one Tuesday per month coming into college for onsite training/delivery 4 pm - 9 pm
You will gain a experience and skills in all areas of food, including units on:
Mandatory Units
• Maintain food safety when storing, preparing and cooking food
• Working effectively as part of a hospitality team
• Maintenance of a safe, hygienic and secure working environment
Optional Units
• Preparing/cooking fish and shellfish
• Preparing/cooking poultry
• Producing fermented dough products
• Producing desserts and puddings
• Preparing/cooking stocks, soups and sauces
• Preparing/cooking fruit and vegetables
• Producing paste products
• Producing biscuit, cake and sponge products
• Prepare hot and cold sandwiches
• Produce basic egg dishes
• Produce healthier dishes
• Maintain an efficient use of food resources
• Maintain an efficient use of resources in the kitchen
• Prepare, operate and clean specialist food preparation and cooking equipment
• Liaise with care team to ensure that an individuals nutritional needs are met
• Prepare meals for distribution

How will my learning be enhanced?
Whilst being onsite in Eastleigh College for the one Tuesday per month you will do practical sessions, be able to discuss theory work and have the opportunity of having guest speakers.
You will leave with a nationally recognised qualification, as well as the option to expand your learning into Level 3.
