What career opportunities can this lead to?

There is the opportunity for students who have successfully completed this programme to progress onto Level 2 Professional Catering. Students can also seek full-time employment in hotels, restaurants, industrial catering, hospitality, cruise ships and the armed forces. Many employers contact the College directly for skilled students to fill their vacancies.

What are the entry requirements?

Entry requirements for this programme include a satisfactory achievement report from school and a successful interview at college, demonstrating a genuine interest in the hospitality and catering industry, coupled with a willingness to work hard. Students also require a least an E grade for English and Maths

What does this programme involve?

Your programme will involve practical work in our kitchens and restaurant. Theory will take place in a classroom environment. You will work in groups for practical, but you may be required to complete some assessed coursework individually or working in pairs.

You will complete:
-VTCT Level 1 Certificate in General Food and beverage service
-VTCT Level 1 Diploma in introduction to Professional cookery Studies
-Food Safety Award
-Functional Skills/GCSE

You will study the following units:
-Introduction to the hospitality industry
-Health and safety awareness for catering and hospitality
-Introduction to healthy eating
-Introduction to kitchen equipment
-Prepare and cook food by stewing and braising
-Prepare and cook food by baking, roasting and grilling
-Prepare and cook food by boiling, poaching and steaming
-Prepare and cook food by deep frying and shallow frying
-Dealing with payments and bar service skills
-Preparing and serving drinks
-Food service

All students without an A*-C grade in English or Maths will be required as a condition of the programme to undertake either a GCSE or Functional Skills programme.

How is the programme taught and assessed?

You will be assessed by completing coursework which is related to the working practices that take place in the kitchens and restaurant. You will be observed throughout the year and will be assessed by the chef lecturers and restaurant lecturers to determine if you are demonstrating skills at Pass, Merit or Distinction level.

What else do I need to know?

We have our own restaurant which is open to the public which has regular theme evenings, and a bar, which is licensed to sell drinks to customers. Students work between a fully equipped pastry kitchen and main kitchen for the preparation and production of food. You will need to purchase a uniform and equipment at an extra cost of approximately 205 before the start of the programme.
